In the summer of 2020, I had the incredible privilege of visiting the legendary Auberge de L’Ill for the very first time. Nestled in the charming village of Illhaeusern, about 15 miles north of Colmar, this iconic restaurant sits in the heart of the beautiful Alsace region, surrounded by half-timbered houses, flowers, and the gentle flow of the romantic River Ill.

I was invited by a dear wine friend — already a promise of something special — but nothing could truly prepare me for the magic of that evening. From the moment I stepped through the door, I felt an overwhelming warmth. The welcome was sincere, elegant, and deeply personal — the kind of hospitality that cannot be staged.

Run by the renowned Haeberlin family since 1882, and led by the legendary Chef Marc Haeberlin, Auberge de L’Ill has long been one of France’s great gastronomic institutions. A three-Michelin-star restaurant for over 50 years (despite losing one star in 2019), it has never lost its soul. If you had asked me that night, I would have said they were still cooking with all the stars in the sky. Every plate radiated precision, heritage, and heart.

The cuisine is a beautiful dialogue between classical Alsatian gastronomy and refined modern touches. Tradition lives here — but it evolves gracefully. Each dish felt like a story told with clarity and respect, yet with contemporary elegance.

The setting only amplified the experience. Located directly alongside the peaceful River Ill, the garden terrace on that warm summer evening felt almost dreamlike. On the photo, you see me sitting there, smiling, soaking in the golden light, completely present in the moment. A happy girl, feeling truly blessed.

And then — a memory I will treasure forever — a private chat with Chef Marc Haeberlin himself. On the second photo, we are captured in conversation. He was humble, warm, and deeply passionate. Speaking with him felt like speaking with living culinary history.

And the wine list? Simply extraordinary. A breathtaking collection of golden labels and legendary vintages — a cellar that reads like a love letter to the world’s greatest wine regions. For a wine lover like me, it was pure joy.

That evening at Auberge de L’Ill was more than dinner. It was emotion, heritage, excellence, and hospitality all woven together. A moment suspended in time. Feeling blessed. A truly happy girl.
